We've been hearing all about "pancake cereal" trending on TikTok, and thought it would be fun to give this trend a shot and put our own twist on it.
First, you're probably wondering, what is pancake cereal? Well, it's basically making mini pancakes - smaller than the size of a coin - and dumping them in a bowl so they look like cereal. Instead of eating them with a fork, you'd eat them with a spoon!
The videos on TikTok showed people piping the pancake batter onto a pan and cooking the mini pancakes on the stovetop, but we decided to try something different and make mini pancakes in fun shapes like fishes, hearts, and clouds.
Although it does take more time to make than your standard pancakes, we did enjoy how it puts a unique spin on the classic pancakes dish. In the end, they turned out pretty crispy and tasty. If we have the time, we'll probably make this again in the future and test out different toppings!

Ingredients & Supplies:
- 1/2 cup pancake mix
- 2/3 cup milk (or dairy alternative)
- Silicone molds
- Toppings of your choosing
Note: we filled 3 different silicone molds with this amount of pancake batter.
Instructions:
- Preheat oven to 350 degrees
- Combine the pancake mix and milk and whisk until the mixture is smooth.
- Spray your silicone molds with non-stick cooking spray and place them on a tray. This will make it easier to move them all to the oven.
- Take your dropper and fill the silicone molds with the pancake mixture. Note: the pancake batter should be thin enough where you can easily fill the dropper with the batter. If the batter is too thick, add more liquid to the batter.
- Fill the silicone molds with the pancake batter. Tip: only fill each cavity until it's about 50-60% full! The batter will expand in the oven, and when it overfills the cavity it makes it more difficult to remove.
- Bake in the oven for about 10-14 min., or until the top turns a golden brown.
- Let cool for about 5-10 min., then pop them out of the molds and into a bowl.
- Finish by adding your favorite pancake toppings!
We preferred to just top our pancake cereal with maple syrup and fruit like blueberries, as we thought adding milk made the pancakes too soggy. You could also try adding butter, chocolate chips, crushed nuts, jam, sprinkles, or even cereal. Because why not?! 😋 🥞
Storage:
We ate them all for breakfast (oops), but if you have any leftovers, store them in an airtight container in the refrigerator and eat within 1-3 days.
